Mint paratha

this was also a pleasant surprise 'cos it was surprisingly delicious..! i had got some mint to try growing them..the leaves was not required to plant them ..what to do with the leaves..i didnt want to make green chutney..i remembered having seen Mint paratha in Sanjeev kapoor's book ..but was not sure if i shud try it ..Mint paratha ! wonder how it wud taste..anyway going ahead by my instincts i decided to give it a try just for me & Adi (my son)..husband wudnt be willing to have it ..;or so i thot..

but when i made it i was pleasantly surprised ..'cos it was too melt in in the mouth with a nice flavour ..& guess what !! husband loved it & said "why did u keep only one for me??"...

Ingredients:

  1. Whole wheat flour - 2 cups
  2. fresh mint leaves - 1 cup
  3. salt to taste

How to make Mint parathas:

Wash & pat dry mint leaves. Dry half of it on a hot tawa or griddle. Cool & crush to a powder using hands. Keep aside.

Chop remaining mint leaves finely. Add to this whole wheat flour & salt & make a soft dough using enough water. Divide the dough into balls.

Roll out each ball into a thin paratha .Make rotis out of it without oil..it will come like phulkas..!

Finally sprinkle dried mint powder that u made in step 1 over the parathas..

the original recipe required to add butter to the dough + the paratha was made like the flaky paratha (malabar paratha)..but i thot this was healthier..

Rajma paratha



i tried this from my collection of Sanjeev Kapoor's books..made slight variations in it .that is to say i omitted a few ingredients 'cos i didnt have them at home ..Rajma is red kidney beans ;the one in the picture !
To make this :
You will need to soak about 1/3 cup rajma for 10-12 hrs. Cook it in a pressure cooker for at least 1/2 hr. Rajma takes a long time to cook. Mash the cooked rajma well using potato masher. Reserve the cooking liquid.



Now to the mashed rajma add 1 cup wheat flour, 1 tsp red chilly powder, 2 tbsp tomato puree, about 8-10 finely chopped mint leaves, 2 tbsp oil & salt. Add the cooking liquid if required instead of water. Knead well to make a soft pliable dough.
Make balls out of the dough .Roll using a rolling pin & make parathas drizzling a little oil on each side .
ingredients i omitted - 1 tsp dry pomegranate powder- 1 tbsp soyabean flour
u can add them if u have at home.

I served this with matar mushroom.

Mooli Paratha


A very common dish in North India.There are a variety of ways to make it ..this is just one of them..

Ingredients:

  1. Wheat flour - 2 cups
  2. Radish - 1 cup (grated fine)
  3. onion - 1 tbsp(chopped finely)
  4. red chilly powder - 1 tsp
  5. cumin seed powder - 1 tsp
  6. ginger - 1 tsp( grated)
  7. salt to taste
  8. water to knead dough

Method:

Mix wheat flour,salt,& enough water to form a soft pliable dough.Add salt to grated radish & leave aside for 5 mts. squeeze out the water completely that comes out.Add onion,ginger,cumin seed powder,red chilly powder to radish.Mix well.

Make balls out of the wheat dough.Roll out medium sized chappattis.Place one chappatti on a plate .Spread the radish mixture evenly .Place another chapatti on top & press the edges to seal thoroghly.Roll the paratha lightly again.Heat a griddle .Spray a little oil.Place the paratha over it .Once it cooks on one side flip it apply a little oil & cook on the other side also until brown spots appear.Mooli parathas are ready to eat!!
